An experimental wine like none other before it or since! Timing worked out that we received New York State Chardonnay and California Cabernet very close to each other. (this doesn't happen in a single region) I decided to have some fun and do a Chardonnay/cabernet Sauvignon co-ferment. 30% Chardonnay and 70% Cab Sauv were de-stemmed to open top t-bin, and allowed to ferment together to dryness. The wine was then pressed to barrels, 30% being new french oak, and aged for two years before bottling. It has now been in bottle for 3 years and has aged remarkably. Only two barrels produced (50 cases) making this an extremely limited run.
The chardonnay adds a beautiful floral aromatic and acidity to the structure, while the Cabernet Sauvignon dominates the palate weight. Highly complex with an integrated and long finish.
