Sourced from the distinct Mediterranean climate of San Joaquin Valley known for intense hot days and cool nights. Picked early in the season in order to maintain bright acidity and balanced alcohol. The grapes were whole cluster pressed to stainless steel tanks for a long and cool fermentation, which lasted 30 days. No Malolactic fermentation. Aged in stainless steel to ensure minimal exposure to oxygen.
