A great expression of the variety, this single vineyard Sauvignon Blanc was gently whole cluster pressed to stainless steel tanks for fermentation and aging. Keeping oxygen to a minimum on this style of wine allows the fruit to pop and keep it lively. Fermented very cold and slow, then racked off the heavy fermentation lees for extended aging. No Malolactic Fermentation.
Winemaker’s Tasting Notes:
Notes of honeydew melon, cantaloupe, lemongrass, and tropical fruit with a hint of freshly shaved nutmeg. Vibrant, bright, and clean flavors show all the way through the long finish. Will cellar well for 10+ years.
